Frozen pie crust (poke holes and blind bake)
1 (8 oz.) pkg. cream cheese
1/4 cup sugar
1/2 cup whipping cream
2 tsp. lemon juice

Fresh fruit in season: Strawberries, blueberries, kiwi, grapes, bananas, etc.


Topping:
2 Tbsp. apricot preserves
1 tsp. water

Directions:
Directions:
Mix cream cheese, sugar, lemon juice, then add whipping cream; mix on high until fluffy. Spread mixture in pie shell and chill for 4-6 hours. Then add fruit of your choice.

Topping:
Mix Apricot preserves and 1 tsp. water. Microwave 5 seconds and stir. Spread over fruit and on pie crust.
