2 cups spelt or whole wheat berried, rinsed
1 tsp kosher salt
2 T veggie oil
2½ tsp curry powder
2 tsp yellow mustard seeds
¾ tsp cardamom
¾ tsp coriander
3 carrots, diced small
black pepper
¼ cup apple cider vinegar
1 cup red onion sliced thin
½ lemon, ends removed and finely chopped with peel
3 cups shredded cooked chicken, or 1 rotisserie chicken
2 cups arugula
2 cups cilantro sprigs

Directions:
Directions:
1. Cook spelt (like rice) and cool.
2. Meanwhile, heat oil, curry mustard seeds, cardamom, coriander until seeds begin to pop...about 3 minutes. Stir in carrots and season with salt and pepper. Cook til carrots are crisp tender, 5 minutes.
3. Add vinegar, 2 minutes. Stir in onion and lemon til onion is wilted, 2 minutes.
4. Add veggie mixture to bowl with spelt
5. Add chicken (if using) arugula, cilantro and olive oil, toss. Transfer to salad platter, garnish with cilantro springs.
