1. Eggs separate better when cold
2. Eggs beat better at room temperature
3. Adding a dash of salt to egg whites makes them easier to beat.
4. Use beaten egg whites immediately or they will revert back to liquid and cannot be beaten again.
5. Always fold beaten egg whites into anything. Do not stir. This breaks up the egg cells
6. Mix egg whites with a little water to make a glaze for breads, etc.
7. Add a little vinegar when poaching eggs.
8. For a light, fluffy dressing, add 2 egg whites beaten stiff to your Mayo.
9. For a great omelet, beat egg whites and yokes separately. Then reunite and proceed.
