1 1/2 T sour dough starter
7 T flour
1/4 c warm water

Mix together in a bowl. Cover with a sprayed plastic wrap. Let sit for a few hours until doubled in size. 2 hours or up to 12 hours.

1/4 t traditional yeast (must be traditional)
1 1/2 t salt
1 1/2 c of warm water

Mix the dough starter with the flour, yeast, salt, and water to form a ball. Let sit for 15 minutes, then knead in the bowl a few times and form a rounded mound. Cover with a sprayed plastic wrap and keep in a draft free warm kitchen for 12-24 hours.

Dump the dough on a floured surface and round with your hands. Place in proofing basket, covered with sprayed wrap and let rise for 2-3 hours.

Do not preheat oven. Remove wrap. Flour 12x12 piece of parchment paper, place it over the proofing basket and carefully invert the dough. Pick up the corners of the parchment paper, and carefully place it in cold Dutch oven and place in the oven. Turn on the heat to 425 for 30 minutes. Remove the lid, and continue baking at 425 for another 25 minutes. Remove from pot and cool completely.
