Broccoli Cheese Soup Recipe

1 T butter
˝ medium onion chopped

1/4 c butter
1/4 c flour
2 c half and half
2 c chicken broth
1 stalk broccoli
1 c julienne carrots
1/4 t nutmeg
8 oz cheddar cheese, shredded

Melt T of butter and sauté onion. I like to also add carrots and broccoli stem that has been peeled and chopped. Sauté until soft, do not brown. Set aside.
In same pot, melt butter and add flour to make a roux. Slowly add half and half and chicken broth, whisk the mixture to make sure there are no lumps. Heat through and simmer for 20 minutes.
To the pot add chopped broccoli tops, carrots and onion. Simmer another 25 minutes.
Stir in nutmeg and cheese. Enjoy!
