1 (15 oz) can Chickpeas, drained and rinsed

½ cup (2 red bell peppers) roasted

1-2 garlic cloves

¼ -½ cup good olive oil

2 T. fresh lemon juice (½ lemon)

1 tsp. ground cumin

½ tsp oregano

½ -1 tsp. salt

1 tsp. smoked paprika

2 chipotle peppers, rinsed (optional) nice smoky flavor

Directions:

In a food processor or blender, combine the chickpeas, red bell pepper, garlic, olive oil, lemon juice, chipotle peppers(if using) and all spices except paprika. Mix until smooth and creamy. If it is too thick, add a bit of water or oil to reach your desired consistency. Scrape into a bowl and drizzle with an extra bit of olive oil and sprinkle with Paprika. Serve with vegetables or pita chips.

** To roast red peppers place them right on the burner of your stove on medium high, turning 3 times so all four sides blacken. This usually takes 10 minutes or so. Place in a bowl tightly covered with plastic wrap to steam for 10 minutes, then rinse off the black skins and chop.

*** I would load the food processer with the minimum measurements of the ingredients. Add more to taste or as needed. Getting the right consistancy is the hardest part of making this hummus.

Such a fresh flavor, this is delicious. You can omit the red peppers and roast a head of garlic and use just that. Try seasoning your own thick pita and roasting it in the oven til crisp, cut into wedges and serve along side the hummus.
