1 ¼ lbs boneless skinless chicken breast (cut into 1 inch chunks)
¼ cup cornstarch
salt and pepper to taste
¼ cup vegetable oil
¾ cup of orange marmalade
¼ cup low sodium soy sauce
1 tbsp rice vinegar
1 tsp sesame oil
½ tsp minced garlic
1 tbsp sesame seeds
2 tbsp sliced green onion

1) Place the chicken chunks in a bowl, add the cornstarch, salt and pepper. Toss to coat chicken

2) Heat oil in a large pan. Add chicken in a single layer and cook for 3-4 minutes on each side until browned. Work in batches if needed.

3) Spray slow cooked with cooking spray and put the chicken in the slow cooker.

4) In a small bowl, whisk together the marmalade, soy sauce, rice vinegar, sesame oil and garlic. Pour the sauce over the chicken and gently stir to coat.

5) Cook on low for 3 hours.

6) Sprinkle with sesame seeds and green onions. Serve over choice of starch.

I was concerned the orange flavour would be a bit lacking, so I added the juice of 1 orange. While the orange flavour was hard to smell, it was definitely tasted. I did find the marmalade made the whole recipe quite sweet, so maybe see if you can find a low-sugar, or no-sugar added marmalade. I also found the sauce to be quite runny, so you could add a thickener near the end. Also, you could add some vegetables (peppers, mushrooms, onions, baby corn, etc).
