1 Tablespoon Olive Oil
5 Cloves Minced Garlic
1 Cup Chopped Carrots
1/2 Cup Chopped Onions
6 Habanero Peppers Stems Removed
1/4 Cup Water
1/4 Cup Lime Juice
1 Teaspoon Lime Zest
1/4 Cup White Vinegar
1 Medium Tomato
Salt and Pepper To Taste

1. Heat oil on medium.
2. Cook and stir carrots, onions, and garlic until the onions are soft and translucent.
3. Transfer the mixture to a blender or food processor.
4. Add the habanero peppers, water, lime juice, vinegar, tomato and lime zest and blend until smooth.
5. Season with salt and pepper and transfer to a sauce pan and simmer for about 3 to 5 minutes.

This is a recipe from Robyn Lindars of Grill Girl. She has many great grilling and smoked meat recipes and I have been following her for a few years. This will be a real hot recipe and should be used with care. For a milder result use fewer peppers or remove the seeds. Be careful when handling the habaneros as if they get in your eyes, you are in trouble. Also, do not lean over the cooking peppers as the steam will do the same thing. In later editions of the sauce, I have found that steaming the carrots first gives better results. Also, using carrot juice instead of water gives more flavor.

If you would rather purchase a readymade habanero sauce, I would suggest Sontava.
