Ingredients:
Ingredients:
1 - 8oz cream cheese
3 tbsp jalepeno jelly (or apricot or peach jam)
2 packet velveeta or queso blanco sauce
1 cup shredded cheddar or Monterey jack cheese
1 can Rotel
1/2 cup or more of chunky salsa
1 - 4 oz can hot green chilis
1/2 tsp adobo seasoning or pinch of cayenne

Directions:
Directions:
In large microwave safe bowl, place cream cheese and jelly or jam. Cover with waxed paper, and heat in microwave one minute. Stir, and continue heating for 30 seconds, then stirring, and repeat until mixture is smooth and blended. Add cheese sauce packets and stir, melt another 30 seconds if needed and stir. Add shredded cheese and repeat stiring and heating until melted together. Add rotel, salsa, and other flavors and stir A LOT to mix in. It will look like it is not going to mix in, just keep stirring and it will eventually mix in. Taste and adjust with seasonings, salsa, hot sauce or whatever you like to get the flavor you want. Serve warm with tortilla chips or top your tacos or burritos with it.

Store remaining dip in sealed container in fridge. Warm gently in microwave in short 30 second bursts and stir frequently to prevent cheese from breaking.

Personal Notes:
Personal Notes:
This evolved over time with lots of experimenting. You can adjust and alter flavors as needed, but the base is the cream cheese, jelly and cheese sauce for the creamy, slightly sweet flavor. Feel free to increase the heat. Be aware if you make ahead the heat will increase.

Optional additions or substitutions - recommend only pick one
1 cup mango salsa - this is my favorite
1 can refried beans
1 large can cooked chicken
1 can chili with meat or chili beans
1 small can enchilada sauce
1 cup cooked taco meat or prepared bulk sausage
1 cup pulled pork
