2 apples (peeled, cored, & thinly sliced)
1 lb. sweet potatoes (peeled & thinly sliced)
¾ tsp. finely chopped crystallized ginger
½ tsp. salt
¼ c. thawed frozen apple juice concentrate
2 tbsp. dark brown sugar
2 tsp. fresh lemon juice
⅛ tsp. ground cloves
¼ tsp. ground cinnamon
2 tsp. margarine diced

Directions:
Directions:
Preheat oven 375º.
Spray 8" sq. dish with cooking spray.
Arrange ½ of apples in dish, top apples with ½ of sweet potatoes.
Sprinkle with ½ ginger and salt.
Repeat layers.
In small sauce pan combine juice concentrate, brown sugar, lemon juice,
cinnamon, cloves and ¼ c. water.
When heated and desolved pour over sweet potatoes and apples.
Cover with lid or foil.
Bake 45 min. add butter.
Bake uncovered 15 min. or until tender.
