2-3 cloves garlic or 1 tsp dried garlic
1 can garbanzo beans (chickpeas), drained and liquid reserved
2 to 3 tablespoons smooth peanut butter
A handful fresh parsley leaves or 1 tsp dried parsley
1 lemon, zested and juiced
1 tsp ground cumin
1 tsp ground paprika
Pinch freshly ground black pepper
Pinch kosher salt
1/3 cup oil

Directions:
Directions:
If using dried garlic and parsley, soak in very hot water in a small bowl for 5 minutes.
Otherwise, chop the garlic finely in a food processor.
Add the beans and 1/2 of the reserved liquid and process finely or to desired consistency.
Add the peanut butter, parsley, lemon zest and juice, cumin, paprika, black pepper, and
salt.
Process until it forms a paste.
Drizzle in the oil slowly and process until it reaches the consistency of mayonnaise.

Rest in the fridge overnight tightly covered before serving to allow flavors to blend.

Serve with pita bread, or fresh carrots and celery and apples.
