2½ lbs. all-purpose potatoes (peeled, cut into 2"chunks)
2 lg. cloves garlic
½ c. butter + additional (at room temp)
3 c. shredded cabbage (7 oz.)
1¼ c. milk (heated)
1 tbsp. chopped scallions
1 tbsp. chopped fresh parsley

In lg. pot, combine potatoes and garlic with enough slated water to cover by 1".
Over high heat, bring to a boil.
Reduce heat to medium; cook until tender, 18-20 min. drain.
In same pot, melt ¼ c. butter over medium heat.
Add cabbage; cook, stirring occasionally, until golden, about 6 min.
Remove from heat; reserve.
Return potatoes to pot with cabbage and msh vegetables until blended.
Stir in milk, ¼ tsp. salt, ¼ tsp. pepper, and remaining butter.
If desired, serve topped with additional butter.
Sprinkle with chopped scalions and parsley.
