1 c. white sugar
1 c. brown sugar
1 c. butter
1 c. oil
1 egg, slightly beaten

3 ½ c. flour
1 t. baking soda
1 t. cream of tarter
1 t. salt
1 t. vanilla
1 c. oatmeal
1 c. Rice Krispies
Chocolate chips (optional)

Directions:
In large mixing bowl, beat butter and sugars until creamy. Beat in oil and egg. In another bowl combine flour, baking soda, cream of tarter and salt. Slowly add to butter mixture. Beat in vanilla until mixed. Add oatmeal and Rice Krispies. Fold in chocolate chips (optional).

Roll into a ball the size of a walnut. (Use small scoop). If dough is too soft, refrigerate first.

Bake 350º on ungreased pan for 8-10 minutes.

If you don't want to make all the cookies at once (5 dozen). Scoop and freeze for 15 minutes. Add to a Ziploc bag and keep frozen - layer with waxed paper. When ready to bake, just put on cookie sheet and bake.

These are very light and taste extra good with the chocolate chips. Since the recipe makes so many cookies, freezing is a good option. Unfortunately, they taste just as good out of the freezer--before they are baked!
