Preheat to 400º

2 tbsp olive oil
500 g strong white bread flour
extra flour for dusting
360 ml cool water
1 tsp salt with 1 tsp Alessi Italian seasoning
2 tsp yeast
Alessi & olive oil for finishing
You can NEVER have too much olive oil. Add!

Add flour to HUGE mixing bowl.
Make separate pockets for salt mix & yeast so they don't touch.
Add to flour. (You can smell the Alessi when it's mixed!)

Mix olive oil into flour mix.
Add ¾ of the water to that, until combined.
Add the rest of the water & mix. Knead in this bowl.
Olive oil the counter surface & knead until dough stretches 18".
Add more olive oil? It will be very sticky, but don't add flour.

Rinse out the bowl & coat with olive oil.
Place dough inside & cover with towel.
Rest in a warm place until it doubles in size.
Remember that each dough is different. Check it often.

Place on sheet pan covered in parchment paper (a little olive oil?)
Spread to the corners, brush with olive oil, sprinkle with Alessi.
Let it rest for 15 min.
Create oil pockets by 'pouncing' (fingers like a cat's claws).
Bake, checking often, until it's light golden brown.
Bread will make a hollow sound when tapped with a spoon.

Brush again with olive oil, sprinkle with Alessi to taste.
