4 C. fresh tomatoes, chopped
1 onion, peeled and sliced
4 cloves garlic, peeled and smashed
2 1/2 C. chicken broth
1 tsp. salt
pepper, freshly ground
1/2 tsp. dried oregano
1/4 C. fresh herbs (such as basil, parsley & oregano), stems removed
1/2 C. heavy cream (optional)
Sour cream, for serving (optional)

1) In a large pot over medium heat, combine the tomatoes, onion, garlic, chicken broth, salt, pepper, dried oregano and fresh herbs. Bring to a boil, then reduce heat. Gently boil for about 20 minutes.

2) Remove from the heat. Puree, using an immersion blender or other means. Adjust seasoning.

3) Stir in heavy cream, if using.

4) Serve with garnish of fresh basil and/or parsley. Add a dollop of sour cream, if desired.
