1/2 c shortening
1 c sugar
2 eggs
1 tsp vanilla
2 1/2 c flour
1/2 tsp salt
1/4 tsp baking soda

Date filling:
2 c dates, raisins or prunes, finely chopped or mashed
3/4 c sugar
3/4 c water
1/2 c nuts chopped

Directions:

Preheat oven to 400º

Filling:
In a saucepan; combine dates, sugar, water and nuts. Cook stirring constantly until mixture thickens, remove from heat. Cool and set aside.

In a large mixing bowl; cream together shortening and sugar, until smooth. Add, eggs and vanilla beat until fluffy.

In a separate bowl; combine together; flour, salt, and baking soda. Add slowly to creamed mixture and mix well together.

On a floured surface; roll dough out to about 1/8 inch thick. Cut a top and bottom with a doughnut cutter. You should have 1 plain bottom with a top with the doughnut hole cut out.

Place the bottom of the cookie on the cooke sheet, add one plus teaspoon of filling, center top cookie over filling and press edges together with a fork. Like a pie crust. Brush the top of the cookie lightly with milk and sprinkle with sugar.

Bake for 8-10 minutes until cookies are light brown. Remove from oven cool on sheet of 1-2 minutes, then cool completely on rack.

I have had this recipe since I was a little girl. They originally were made By Tillie Muske for Diann's Drive-In. One of my favorites, but very rich.
