2 eggs, beaten
2 tsp sugar
1 c milk
1 c flour
1/2 tsp salt
1 T lemon extract
oil for frying
rossette irons

Directions:

Beat 2 eggs together; add 2 teaspoons sugar; then add milk.

Sift flour into egg mixture and beat until smooth, should be the consistency of heavy cream. Add lemon extract and stir in until combined.

In a deep pan or fryer add enough oil, about 2 1/2 quarts. Heat oil to 400º. Dip the rosette iron in the oil to heat; drain excess oil on paper towels.

Dip the hot iron about 3/4 of the way into the batter, do not allow batter to go over the top. Batter will adhere to the iron, if not re-dip. Plunge irons into the hot oil and cook until active bubbling ceases. With a fork, gently ease rosette off the iron and drain on paper towels.

While still warm, dip rosette into powdered sugar. Cool completely.
