Salt
Egg
Biscuit crumbs or crushed Cornflakes
Margarine

Directions:
Directions:
1. Wipe fillets with paper towel or damp cloth.

2. Beat egg slightly with fork.

3. Sprinkle little salt on fish. Dip into egg, then into
Cornflakes or crumbs.

4. Place into a well-buttered Pyrex dish. Dot with
more margarine and place in hot oven 400º -
425º.

5. Bake 15 - 25 minutes.

6. Garnish with lemon slices or parsley.

This recipe is from a cookbook Ma had called “Newfoundlander’s Favourite
Recipes”. I thought it fitting since you can use either cod or flounder, a nod to both
Ma and Pop.
