4 lb butter, softened
2 lb 8 oz (1 qt & 1 c) sugar
5 lb 8 oz flour

I use one quarter of this recipe: 1 lb butter, 1 1/4 c sugar, 5 1/4 c flour.

Whip butter until fluffy. Gradually add sugar a little at a time, cream until smooth and fluffy.

Add flour; 1 cup at a time until just mixed. Do not over mix.

Roll dough into logs about 3 inches in diameter; wrap in waxed paper. Cool about 1 hour or longer before slicing cookie logs about 1/4 inch thick.

Bake at 350º for about 18 minutes or until the edges just start to show browning. Pull before cookie browns. They burn easily.

These cookies are as close to Walker's Shortbread as I found.

Note: Great for Valentines Day, dipping half the cookie in chocolate.

Having worked with the Navy either through Scott's association or my years as a nurse at Naval Hospital Bremerton, I have many fond recipes, this being one of them. The saying goings "She can cook for an Army," I can cook for the Navy too! Also good to dip half the cookie in chocolate.
