½ cup all- purpose flour

1 tsp. salt

½ tsp. Cayenne Pepper

1 cut up whole chicken, OR 3lbs of chicken pieces

¾ cup butter, melted

¼ Packed brown sugar

¼ cup honey + extra for brushing on the chicken

¼ cup lemon juice (1½ lemons maybe 2)

1 T. soy sauce

1½ tsp. good curry powder



Directions:
Directions:
In a bowl, combine flour, salt and cayenne pepper; add chicken pieces and dredge to coat chicken. Pour ½ cup (1 stick) of butter into a 10x16x2 inch bar pan or sheet pan with a rim; place chicken in pan turning once to coat floured chicken in butter.

Bake, uncovered at 350* for 30-40 minutes. If pieces are large I do 40 minutes, smaller 30 minutes.

Combine brown sugar, ¼ cup honey, lemon juice, soy sauce, curry powder, and remaining ¼ cup butter.

After baking for the 30-40 minutes pour sauce over chicken. Bake an additional 45 minutes more or until chicken is done when checked with a meat thermometer. Baste chicken with sauce throughout the 45 minutes. Just before the 45 minutes is finished baste the chicken with honey using a pastry brush.

This is a family favorite, I usually double the sauce and serve with white rice to soak up the yummy sauce.
