3 oz salt pork, diced. or bacon
1 medium onion
¾ cup diced celery
1 garlic clove, minced
1 bay leaf
¼ tsp dried sage
¼ tsp dried thyme
2 T flour
3 medium potatoes, peeled and cubed.1/2 inch
4 cups fish stock or 2 cups bottled clam juice plus 2 cups water
1 1/2 lbs frim texture fish fillets, or shrimp, scallops, clams, squid etc.
2 cups half n half cream
salt and pepper
chopped parsley

Directions:
Directions:
Sauté salt pork, onion. Add celery, garlic and herbs. Cook 3 minutes. Add flour and stir 2 minutes longer. Sirt in potatoes and stock and simmer til tender, 20 minutes. Add fish and simmer til cooked. Remove bay leaf. Add cream and heat. Salt and pepper to taste.
