4 T green onion, chopped
4 T butter
½ cup sherry
3 cups chicken or crab, diced
salt and pepper

Sauce
4 T butter
5 T flour
2 cups hot milk
salt and pepper
2 egg yolks
½ cup heavy cream
¾ cup swiss cheese

Directions:
Directions:
1. Sauté onion in butter, add sherry and mix with meat. Set aside.
2. For sauce, melt butter and add flour and blend. Add milk, seasoning, simmer for 1 minutes and remove from heat. Beat yolks and cream. Add and stir. Fold in cheese, should be think. Add most of the sauce to filling. use the rest to pour over crepes after filled.
