2 small acorn squash, cut in half and seeded
olive oil for drizzling
¼ cup finely chopped red onion
1 clove garlic, minced
1 tsp cumin
½ tsp cinnamon
½ cup kale uncooked
splash of balsamic vinegar
1 cup cooked quinoa
drizzle of honey
¼ cup chopped green onion
¼ cup feta cheese
¼ cup currants or raisins
½ cup cilantro, chopped
pinch red pepper flakes
¼ cup roasted pepitas

Directions:
Directions:
1. Preheat oven to 425º. Roast squash halves brushed with olive oil, salt and pepper.30-40 minutes.
2. Filling
In large skillet, heat T of olive oil, Sauté onions. Add garlic, cumin, cinnamon and cook til fragrant but not burning. Mix in kale til wilted. Turn off heat and add cilantro, raisins, feta and red pepper flakes.
3. Scoop into squash halves and top with pepitas and more feta and a drizzle of honey.

Can make filling in advance.
