1 medium sweet potato
1 large Gala apple, chopped
¾ cup cherry tomatoes, halfed
1 ear fresh corn, husked
olive oil for drizzling
2 handfuls baby spinach or arugula
¼ cup pepitas, roasted
sea salt and black pepper
¼ cup feta cheese

Dressing
1 T olive oil
2 tsp shipotle paste or powder
2 tsp apple cider vinegar
¼ tsp hone or maple syrup
salt and pepper

Directions:
Directions:
1. Heat oven to 350º. Line pan with parchment and spread potatoes, tomatoes and apple and drizzle with olive oil and pinch salt and pepper. Roast 30 minutes, toss between.
2. Wrap the ear of corn in foil and roast the last 15 minutes.
3. In small bowl whisk oil, chipotle paste, cider vinegar and honey and salt and pepper.
4. In large bowl place spinach along with the roasted vegies and corn cut off the ear. Add dressing, pepitas and feta cheese and toss.
