Take any veggies you like.

Carrots, celery, peppers, mushrooms, broccoli, cauliflower, onion, yellow squash, zucchini, brussel sprouts, cherry tomatoes, yams. Whatever you want.

Directions:
Directions:
Preheat oven to 500ºF. Cube veggies and place in large bowl. Add, to taste, salt, pepper and Italian seasoning. Coat with olive oil and stir until all veggies are coated. Place in a single layer on a cookie sheet and bake 15 minutes.
