3 c flour
1/2 c unsweetened cocoa
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
2 eggs
1/2 tsp nutmeg
1/2 tsp baking powder
2 c sugar
2 c zucchini, shredded, unpeeled
1/2 c oil
1 c nuts, chopped

Preheat oven to 350º. Grease two 8x4x2 inch loaf pans.

In a large bowl, mix together dry ingredients except sugar; set aside.

In another bowl; beat together sugar, zucchini, and eggs. Add oil and mix well. Add the flour mixture to the zucchini mix; combine throughly; fold in nuts.

Divide the batter between the two pans. Bake for 55-60 minutes or until toothpick comes out clean. Cool in pan for 10 minutes before removing to wire racks too cool completely. Wrap and store overnight before slicing.

This bread freezes well.
