8-10 uncooked lasagna noodles
1 egg
1 C low-fat ricotta or cottage cheese
2 C grated Mozzarella cheese
¼ C grated parmesan cheese
¼ tsp ground black pepper
½ pound ground beef or ground turkey
1 C sliced bell pepper, green or red
2 C sliced mushrooms
1 C chopped onion
4 C prepared spaghetti sauce

Directions:
Directions:
Mix egg, cheeses, and pepper together in a bowl; set aside. Saute meat in skillet until cooked, draining excess fat. Add vegetables and sauté for 5 minutes over low heat. In 9x13 pan, layer ½ of the sauce, noodles, meat/vegetables, cheese mixture, then repeat, making sure all noodles are covered. Sprinkle with additional mozzarella cheese if desired.

Bake at 350º for 1 hour, or until done.

*For vegetarian lasagna omit the meat, and layer with sliced zucchini and spinach.
