Ingredients:  
Broth: Remove meat from turkey carcass and set aside. Simmer everything else, skin, small bones, drippings, etc. in water for 1 hour.

Pour through strainer to remove all bones.

Add to broth:
2 cups chopped turkey
2 sticks celery, chopped
1 carrot grated
1 med. onion, chopped
salt & pepper to taste

Small bag egg noodles (I like the dough type egg noodles-found with the pasta or can be found in the freezer section-only use ½ or so of these. I cook them ahead of time in chicken broth as they will absorb a lot of moisture. I then add them to the soup.

Or make the broth and freeze in a large container to make soup another time.

Could do the same with a chicken. Simmer whole chicken in water for 1 hours.
