1 LB red potatoes, cut into bit sized pieces

3 T. Water

2 T. Dark Brown Sugar

2 T. Cider Vinegar

1 T. Dijon mustard

1½ tsp. minced fresh Thyme or 1 tsp. dried thyme

¼ tsp. black pepper

1 T. olive oil

½ cup Onion, chopped

¾ LB Smoked Kielbasa or Polish Sausage, sliced into bite size pieces

4 cups fresh baby spinach

Additional Ingredients: I double this recipe. Maybe even tripling the sauce. i also add some caraway seeds to the sauce.

1. Place potatoes and water in a microwave safe dish. Microwave, covered, on high until potatoes are just tender, drain. You can also par-boil them on the stove.

Meanwhile, mix brown sugar, vinegar, mustard, thyme, and pepper. This is the sauce. In a LARGE skillet or even a sheet pan to use in the oven heat oil over medium heat; saute onion and kielbasa until onion is tender and sausage is browned nicely.

Add potatoes; cook and stir until lightly browned, stir in brown sugar mixture. Bring to a boil, reduce heat and simmer uncovered for 2 minutes. Stir occasionally then add in fresh spinach & cook until wilted.

* You can use a stoneware bar pan or greased cookie sheet. I would start with onion, kielbasa, potatoes, and put it in at 375*. once that is browned and potatoes are tender, add sauce and spinach an stir together.
