8 T. sugar, divided
1 T. cornstarch
1/2 c. water
3 egg whites
1/8 tsp. salt
1/2 tsp. vanilla

Directions:
Directions:
Combine 2 tablespoons of the sugar and the cornstarch in a small pan. Stir in water and cook over medium heat, stirring until thick and clear. Remove from heat; cool syrup mixture to room temperature.

In a large bowl, beat egg whites with salt and vanilla until soft mounds form. Add remaining sugar gradually, 1 tablespoon at a time, beating well after each addition. Add cooled syrup slowly, and beat until stiff peaks form. Spread meringue over prepared pie filling, making sure meringue is sealed well to edges. Bake at 425ºF for 7 to 8 minutes, or until meringue is lightly browned.
