1 large onion (or 2 small) - peeled and finely chopped
2 cloves garlic - minced
2 tsp minced ginger
2 tbsp mild - go hotter if you prefer curry powder
1 tbsp ground coriander
˝ tbsp ground cumin
1 tsp paprika
˝ tsp ground cinnamon
1/2 tsp salt
˝ tsp black pepper
2 medium sweet potatoes - peeled and chopped into small chunks
1 diced red pepper
1 can chickpeas, drained
2 cans chopped tomatoes
2 tbs full fat coconut milk
2 packed cups baby spinach

Directions:
Directions:
Water sauté onion until translucent. Add garlic and ginger and the remaining spices.
Stir together and cook for a minute or so.

Add sweet potato, chick peas, tomatoes, diced red pepper, tomato paste and coconut milk, and cook until sweet potatoes are softened. Add baby spinach and turn off heat.


To Serve:
Brown rice or bulgar
Fresh coriander
Red onion slices
Chilli flakes

For a variation: add raw cashews while cooking and/or snow peas
