Dutch Baby Pancake Ingredients

Powdered Sugar (garnish)
1 cup All-Purpose Flour (sifted)
Pancake Syrup or Maple Syrup
4 Large Eggs
4 tbsps. Butter (melted, plus extra for serving)
1 cup Whole Milk
1/2 tsp Kosher Salt
Wild Berries or Compote (recipe Below)


Berry Compote
INGREDIENTS
1 cup blackberries
1 cup raspberries
2 cups frozen blueberries
2 - 3 tablespoons granulated sugar (add more to taste)
Optional: dash of orange juice or lemon juice or the zest of lemon or orange.

Instructions for Dutch Baby Pancake
1) Preheat the oven to 475°F.
2) In a large mixing bowl add milk, melted butter, flour, salt, and eggs.
3) Blend with a mixer until smooth.
4) Heat a cast-iron skillet and melt 2 tablespoons butter in the skillet on the stovetop.
5) Once butter is sizzling, pour the batter into the skillet, then place the skillet in the oven for 17 to 18 minutes. (Watch carefully as you do not want this baby to burn up).
6) After baking in the oven, remove the skillet and slather it in butter.
7) Cut slices of the Dutch baby and plate with whichever combination of berries or berry compote, powdered sugar, and syrup or maple syrup you prefer.

Instructions for Compote
1) Wash berries. Drain, but do not dry. Place berries in a sauté pan and add 3 tablespoons of sugar, and juice or zest if you want to add juice or zest. Cover and let simmer for 4-6 minutes, stirring every 2 minutes.
2) Once the berries have released their juices and thickened the compote is done. Taste and add more sugar if you need to.
