2 c dry couscous

1/2 c green onions, chopped

1 fresh jalapeno, finely diced

2 Tbsp. olive oil

1/2 tsp. ground cumin

1 pinch cayenne pepper

1 pinch ground black pepper

2 c vegetable stock

2 Tbsp. chopped fresh mint

1 bunch asparagus, trimmed and chopped into 1/4" pieces

1 c shelled fresh frozen peas

salt & pepper to taste

Combine the couscous, green onion, jalapeno, olive oil, cumin, cayenne pepper and black pepper in a large bowl; stir until the olive oil is combined.

Bring the stock, asparagus, and peas to a boil in a large pot.

Pour stock components over couscous components; shake bowl to settle couscous into liquid. Cover and let stand for 10 minutes. Fluff with a fork. Add mint and season to taste.
