• ¼ C mayo
• ¼ C Mexican Crema (or sour cream)
• ½ C finely crumbled Cotija cheese
• ½ t ancho chili powder
• 1 clove garlic, minced
• ¼ C chopped cilantro
• 4 ears shucked corn
• 4 lime wedges

Directions:
Directions:
Combine mayo, crema, cheese, chili powder, garlic, and cilantro in a large bowl, stir until well blended then set aside.

When grill is hot, place corn over high heat and grill, rotating frequently until cooked through and charred in spots all over (approx. 8 mins total).

Transfer corn to bowl with cheese mixture and coat corn on all sides with mixture.
Sprinkle with extra cheese and chili powder and serve with lime wedges.
