Hormone free chicken legs, wings, or quarters
Tony's Injectable Creole Butter
Hidden Valley Italian Dressing
Walkerswood Jerk Seasoning
Sweet Baby Ray's Vidalia Onion BBQ Sauce
Chopped Garlic

Wash the chicken and place in a large salad bowl, preferably one with a lid. Inject each piece of chick with the creole butter liberally. A full syringe should inject two legs or 3 wings. Add chopped garlic, Italian blend seasoning (Oregano, sage, parsley, thime, basil), sea salt, black pepper, and a light dose of brown sugar. Mix thoroughly to coat evenly. Cover and let sit for 1 hour. Add Walkerswood jerk seasoning (1 generous spoon full for every 6 pieces of chicken). Add Italian dressing (half cup). Mix, cover refrigerate 12 hours. Remove from fridge, let stand 12 hours or until room temp (never cook cold meat). Mix and cook. In the oven, cook covered on 325 for an hour then mix and cook uncovered for 1 hour till browned externally and an internal temp of at least 165 degrees. Baste with BBQ sauce and let rest uncovered 15 minutes

For grilling, space chicken evenly over white hot charcoal, uncovering for rotation every 15 minutes for even cooking. Cook to internal temp of 165, then baste and cook for another 15 minutes on each side.
