Whole bone in Turkey breast (6-7 lbs)
1 Tbs minced garlic (3 cloves)
2 tsp dry mustard
1 Tbs chopped rosemary
1 Tbs chopped fresh sage
1 tsp chopped thyme
2 tsp salt
1 tsp pepper
2 Tbs olive oil
2 Tbs freshly squeezed l;emon juice
1 C dry white wine

Preheat oven 325
Place turkey breast, skin side up on a rack in a roasting pan
In small bowl, combine the garlic, mustard, herbs, salt, pepper, olive oil & juice to make a paste.
Loose skin and gently smear directly on the meat & then on the skin. Pour wine into the bottom of the pan.
Roast turkey for 1 3/4 to 2 hours, until skin is golden brown & 165..
IF THE SKIN IS OVER BROWNING, TENT.
When done, cover with the foil & allow it to rest at room temp for at least 15 min.
Slice and serve with pan juic es.
