1/4 c polyunsaturated oil
1 white onion, chopped
2 stalks celery, chopped
4 cloves garlic, minced
1/2 green pepper, chopped
1 8oz can tomato sauce
1 - 16 oz can whole tomatoes mashed
2 c water
2 -8 oz pkgs frozen okra, cut up
2 bay leaves
pepper to taste
1 lb raw shrimp, peeled and deveined
1 lb crab meat
1 T dried parsley

Directions:

Heat oil in a kettle. add onion, celery, garlic, and green pepper and sauce over medium heat until vegetables are tender-crisp .

Add tomato sauce and mashed tomatoes and simmer 5 minutes.

Add water, okra, bay leaves and Pepper. Cover and cook until okra is tender. Discard bay leaves. At this point gumbo base can be refrigerated or frozen.

To complete, reheat gumbo based add shrimp and cook until shrimp turns opaque . Add crab meat warm through. Garnish with parsley.
