1 baked pie shell
2 T. cornstarch
3 T. flour
1/4 tsp. salt
1/2 c. sugar
2 cups milk
3 egg yolks
1 T. butter
1 tsp. vanilla
3 - 4 bananas
Whipped cream,
(or 1 carton of Cool Whip, defrosted)

Directions:
In a medium bowl mix together cornstarch, flour, sugar and salt. In a saucepan, over medium heat, scald the milk, but do not boil. Gradually add the dry mixture to the milk; cook until thick and smooth. Reduce heat to medium-low and cook 15 minutes more, stirring constantly to keep from burning. Remove pan from heat. Beat the egg yolks and stir a small amount of creamed mixture into the beaten eggs; then add eggs, stirring constantly, to the rest of creamed mixture. Return pan to stove, cook about 5 minutes longer. Add the butter and vanilla, and blend well. Set pan aside to cool. Meanwhile, arrange 3 or 4 sliced bananas in baked pie shell. Cover with cooked filling and cool completely before adding topping. Top with whipped cream (or use a carton of Cool Whip, defrosted). Chill in refrigerator several hours before serving.
