Crabmeat Stuffing


Ingredients:

½ c. onion, chopped
⅓ c. celery, chopped
⅓ c. green pepper, chopped
2 cloves garlic, finely chopped
⅓ c. oil
2 c. soft bread crumbs (I use prepackaged Italian bread crumbs)
3 eggs, beaten
1 T. parsley, chopped
2 t. salt
½ t. pepper
1 lb. crabmeat

Directions:

Sauté onion, celery, green pepper and garlic in oil until tender. Add bread crumbs, eggs, parsley, salt, pepper and crabmeat. Mix thoroughly.
 

Stuffed Flounder

3 lbs. flounder, dressed
crabmeat stuffing (recipe above)
¼ lb. butter, melted
¼ c. lemon juice
2 t. salt
2 T. water
paprika

Directions:
Directions:
Rinse flounder and pat dry. Stuff fish loosely with crabmeat mixture. Combine butter, lemon juice, salt and water. Place fish in a well greased baking dish. Pour butter mixture over fish. Sprinkle with paprika. Bake at 350º for 30 - 45 minutes until fish is opaque and flakes with a fork.

The flounder we get is usually not thick enough to stuff. It's sliced thinly. So I layer a piece of fish on bottom, pile on stuffing, then put another layer of fish on top. Or, you can roll the fish fillet around a blob of stuffing.
