6 to 8 Quail
3/4 cup plain flour
1 1/2 tsp seasoned salt
1/2 tsp pepper
3 to 4 tbsp butter
2 tbsp onion (minced)
2/3 cup water
2/3 cup evaporated milk (small can)
1 tsp instant chicken bouillon

Directions:
Directions:
Skin quail and split in half, lengthwise. Combine flour, salt, and pepper in a plastic bag and shake quail (two or three pieces at a time) in the mixture to coat. Melt two tablespoons butter in a large, heavy skillet and brown quail. Add butter if needed and fry until done. Turning often. Cooking time is about thirty minutes. Remove quail to a hot plate and keep warm. Stir in one tablespoon of butter into the pan drippings and lightly brown onion. Combine water, milk and bouillon and stir about half of mixture into the pan. Stir well to pick up any drippings. Add rest of water mixture; stir until it bubbles and return quail to pan. Spoon sauce over quail until well coated and serve.
