4 Halibut steaks
2 T tamarind paste, seeds removed
2 T Hot water
2 T fish sauce
2 T soy sauce
2 T grated fresh ginger
2 T rice wine vinegar
2 T brown sugar

Directions:
Directions:
1. Place tamarind paste in a small bowl, add hot eater and stir to combine. Set aside for 5 minutes.

2. Combine tamarind mixture, fish sauce, soy sauce, ginger, vinegar, and brown sugar in a quart size baggie.

3. Bag halibut. Combine all 3 in a gallon size bag. Freeze.

Thaw in refrigerator

Bring the tamarind paste mixture to a boil over medium heat. Cook down about 10 minutes.

In a skillet heat 2 T butter an 2 T olive oil. Brown halibut on one side. flip fish. Then Add Tamarind sauce and spoon over second side of the fish until fish is done.
Serve over Rice grits.
