1 lb. beef sirloin tips, or good round steak, cut in stew meat pieces
1 small onion, chopped
1 large leek white, sliced thin
1 c. celery, chopped
4-5 carrots, chopped
3-4 potatoes, cut in cubes
1 bottle Guiness
Salt, pepper, 2 bay leaves, thyme


Directions:
Directions:
Put all ingredients in a crock pot, and add ¼ cup water. Let cook for about 8-10 hours.
Before serving, thicken it up with a flour-water mixture.

Serve with Irish Soda Bread.
