CRUST
1½ cups graham cracker crumbs
½ cup sugar
6 tablespoons butter

FILLING
2 8 oz packages cream cheese, softened at room temperature (not low fat)
2 cups sour cream
1 cup sugar
3 eggs
1 teaspoon vanilla extract (the good stuff)

Directions:
Directions:
Preheat oven to 375º.

CRUST
Combine the crumbs and sugar. Melt the butter and mix together. Spread mixture over the bottom of a springform pan. Press with your fingers to firm.

FILLING
Cream sugar and cream cheese together. Add eggs, one at a time and mix. Mix in sour cream and vanilla.

Pour into pan on top of crust.
Sometimes the butter will leak out of the crust. Wrap aluminum foil around the bottom of the pan to prevent a mess. Place the pan on top of a cookie sheet.

Bake for 30 minutes. Do not open the oven!

Turn off oven and let the cheesecake sit in the oven for 1 hour. Do not open the oven!
