Ingredients: 2lbs Small Red Potatoes (As close to bite size as possible OR cut in half)
1 bag fresh Baby Carrots
1 large Onion, cut into wedges
1(2-4 lb) Corned Beef Brisket WITH seasoning packet
1 large Green Cabbage, cut into wedges
2 cups Apple Cider (organic apple juice that you have to shake to combine)
Additional Spices: ½ tsp. whole peppercorns, ½ tsp. whole salt, 2 bay leaves, ¼-½ tsp. whole fennel seed, ¼-½ tsp. crushed red pepper, ¼-½ tsp. whole cloves. You could use a good fresh pickling spice & just use a generous sprinkling.

HORSERADISH SAUCE
½ cup Sour Cream ¼ cup Mayonnaise 2 T. prepared horseradish 2 tsp. Dijon Mustard

Directions:1. Make Horseradish Sauce early & store in the refrigerator. This gives the ingredients time to get happy together! Mix all 4 sauce ingredients together in a small dish with a lid. I usually make a double batch of it. Its a tasty sandwich spread!
2. Place potatoes, carrots, & onion in large slow Cooker. Add in the additional seasonings on & around the vegetables. Top with Corned Beef Brisket fat side up; sprinkle with seasoning packet on top of just the meat. Add apple Cider & water (enough to fill half the pot) around the meat so you don't wash the seasoning packet of spices off the meat.
3. Cover; Cook on high setting til it starts bubbling then turn to low setting for 8 hours. If you have less time, keep it on high setting for longer.
4. About 45 minutes before serving, remove beef from slow cooker & keep warm in the oven! Add Cabbage wedges poked with toothpicks to hold wedges together into the slow cooker. Or just roughly chop Cabbage & throw it into the pot. Increase temperature to high if its not already; cover & cook til tender 30 - 40 minutes. |
