Ingredients: 500g sloes - stalks removed 125g caster sugar (granulated will do too) 1 Litre of gin

Directions:STEP 1 Find some sloes and pick them!
STEP 2 Rinse or wipe sloes and prick all over with a needle or even easier still pop the sloes in the freezer overnight - this will split the skins.
STEP 3 Put the sloes in a bottle big enough to hold the sloes and 1 litre of gin - I have used a 1.5 lire lemonade or sparking water bottle.
STEP 4 Add the sugar - this is best done through a very dry funnel. Then add the whole bottle of gin.
STEP 5 Screw the top on tightly and leave in a dark place for three months - shaking it every few days. (You could set an alarm on your phone to remind you)
STEP 6 After three month strain the liquid through muslin or very fine sieve and rebottle. Remember to label the bottles. |

Notes: Sloe gin can be left for a long time once finally bottled and tastes good on it own or with a tonic water - add more sugar at first stage if you like it sweeter.
