1 cup long-grain jasmine rice
1 1/2 cups water
3 tsp olive oil, divided
1 small garlic clove, finely minced
4 green onions, finely chopped
1 tsp lime zest
1/2 tsp salt
1 juice of a lime
1/4 cup cilantro, finely chopped

Directions:
Directions:
Combine the rice, water, salt and 1 tsp of olive oil in a medium saucepan. Bring to a boil, cover and reduce to a simmer. Simmer for 20 minutes. Uncover, fluff with a fork, then add the garlic, green onions, and lime zest, stir to combine. Let cool for 1 minute then add the remaining 2 tsp of olive oil, lime juice, and cilantro. Stir to combine and salt to taste. Add more lime if desired.
