4 cups pasta (short cut such as spirals, bow ties, etc.)
1 tsp kosher salt
3 cups water
1 12-oz can evaporated milk
1 10-oz can Rotel (diced tomatoes and green chillies), undrained
1 cup shredded mozzarella cheese
Salt and pepper, to taste

Directions:
Directions:
Combine the pasta, salt, and water in a large skillet. Bring to a boil over high heat. Cook, stirring occasionally, until almost all of the water is gone and the pasta is tender. Add the evaporated milk and Rotel. Bring to a boil. Reduce heat to medium and cook until mixture thickens, about 5 minutes. Add the cheese and cook, stirring until the cheese is melted. Add salt and pepper to taste. Serves 6.

I found this recipe in a supermarket checkout cookbook called "Fall Recipes.". You can't believe how impressive this tastes despite the few ingredients. Make sure you use at least a 12-inch skillet to cook this in. It could be a main dish if you want, or use it as a side dish.
