1 t sea salt...
1/2 t black pepper...
1 t Italian seasoning...
1 t garlic powder...
1 t ground coriander...
2 T extra light olive oil...1 1/2 pounds pork tenderloin...

Directions:
Directions:
Preheat oven to 400º with the rack in middle of oven...
Trim tenderloin of fat and the silver skin, pat dry with paper towel. Pierce tenderloin with fork all over...
Rub T of the olive oil all over...
Combine the rest of dry seasonings, sprinkle all over roast then using your hands rub the spices into the roast, until evenly coated...
Heat 1 T oil over medium-high heat in a large cast iron skillet. Once hot skillet add the tenderloin and brown all over...
This will take no longer than 10 minutes...
Place pork in oven and bake for 14 minutes, flipping the pork 1/2 way through the cooking process....
Place meat on carving board, cover loosely with foil and rest 5 minutes...
Slice and serve....

Salad of greens or a tomato salad with olive oil and mozzarella cheese, basil and kala mata olives are both very good with the pork. Enjoy a red wine, slightly chilled and dinner is served.....
