6 boneless skinless chicken thighs
3 Tbsp olive oil
1 red onion, cut into strips
1 red bell pepper, cut into strips
1 bunch asparagus, washed and with ends broken off
1/2 tsp paprika
1/2 tsp garlic powder
1/3 tsp salt
1/4 tsp pepper

Directions:
Directions:
Preheat oven to 400º. Line a baking sheet with foil or parchment paper for easier clean-up. Add all of the spices in a small bowl and mix together thoroughly. Place the peppers, onions, asparagus and chicken on the baking sheet. Drizzle everything with olive oil and then sprinkle with the spices. Bake at 400º for 40-45 minutes until chicken is done and the asparagus looks browned and crisp.

I used Quorn vegan chicken fillets instead of the chicken thighs and also used red, orange and yellow peppers instead of only red peppers. I also used smoked paprika in place of the regular paprika.
