2C flour
1C. sugar
2 tsp soda
2 tsp cinnamon
1/4 tsp salt
1 1/2 C carrots shredded
1 1/2 C apples shredded
3/4C coconut
1/2 C nuts chopped (Optional)
4 egg whites
1 tsp vanilla

Combine four, sugar, soda, cinnamon and salt in a bowl. In another bowl combine carrots, apples, nuts. Stir in egg whites, oils and vanilla. Add in dry ingredients; stir until moist. Fill muffin tins 3/4 full bake at 375 for 18-20 minutes or until done
